So I’m going to start cooking.  That’s right…I’m going to stop just looking at food blogs and actually give it a shot.  Here’s recipe #1:

20 Minute White Bean Turkey Chili

1 cup chopped onion

1-3 cloves garlic, minced

1 Tbspn vegetable oil

1 lb. ground turkey (combo dark and white meat)

1 cup chicken broth

1 14 ½ oz. can stewed/diced tomatoes

1/3 cup dijon mustard

1 Tbspn chili powder

1/8 to ¼ tsp ground red pepper

1 15 oz. can cannellini beans drained and rinsed (any white beans are fine)

1 8 oz. can corn drained (or frozen)

Tortilla chips, shredded cheddar cheese & cilantro (optional)

Directions:

In a 3 quart soup pot, over medium-high heat, sauté onions and garlic in oil until tender.  Add turkey, cook until done, stirring occasionally to break up meat.  Stir in chicken broth, tomatoes, mustard, chili powder and pepper.  Heat to a boil, reduce heat.  Simmer for 10 minutes, then stir in beans and corn, cook for 5 more minutes.  Top with tortilla chips, shredded cheese and cilantro if desired.  Makes 6 servings.
